Roasted Sweet n' Smoky Pecans
Pecan trees are Native to North America and harvested from October through December. This seasonally-minded recipe makes a great snack or even gift for your nut-happy near and dear:
    1 large egg white, lightly whisked
    1/3 cup agave syrup
    1 tsp vanilla
    1 tsp smoked paprika
    1 tsp dried marjoram
    ½ tsp cayenne pepper
    1 tsp kosher salt
    2 cups pecan halves
Preheat oven to 275 degrees. Mix agave syrup, smoked paprika, marjoram, cayenne pepper, and salt. Add to the egg whites and mix well. Toss in the pecans until thoroughly coated and transfer to a parchment-lined baking sheet in a single layer. Bake for 45-50 minutes, stirring the nuts every 10 minutes or so. Remove from oven and allow to cool.

Cherry Holiday Tea Bread
    1 cup organic white flour
    1 cup organic whole wheat flour
    ½ tsp baking soda
    ½ tsp salt
    1 ½ tsp baking powder
    1/3 cup amber agave syrup
    1 egg, lightly beaten
    3 TBS organic butter
    ¾ cup orange juice
    1 tsp orange zest
    1 tsp lemon zest
    ½ cup organic dried cherries or cranberries
Preheat oven to 325 degrees. In a large bowl, combine the flours, baking soda, salt, baking and powder. Add in agave syrup, egg, butter, orange juice, and zests. When combined, add in dried cherries or cranberries and mix to distribute evenly. Pour into greased 9-inch bread pan (or two medium-sized bake-and-give pans) and bake for 50 minutes, or until a knife gently inserted in the middle comes out clean.
